Blue Berry Ice Cream




Outside temperature is around 44°C, just a very beginning phase of scorching Middle East summer. What else, I can think of other then Ice Cream, just to cool myself. 


When, I look at my fridges, found fresh blue berry pack and left over fresh cream (need to consume quick, otherwise will expire) and immediately in to action so that, can have it in the evening, instead of tea.

Ingredients : 1 ½ cup of full fat milk    ;    ¾ cup of condense milk    ;    ½ cup of cream ;         1 cup of pureed blue berry        ;         2 tbsp of chopped almond 


Procedure : Blend together, the milk, condense milk, pureed blue berry in  blender till smooth and Add cream and continue to blend till all incorporated well. Finally add chopped almonds.

Pour the mixture in molds and transfer into the freezer to set. May take up to 3 – 4 hrs and then all yours !!.

Marble Fudge




I had been forefending myself from the black devil (Dark Chocolate) but, not any more….Yes, I want to treat myself with Fudge. But, my son won’t like the mild bitterness of Dark Chocolate.

So, in order to dilute the bitterness, I go with white chocolate. A fudge become a Marble Fudge; A Win-Win deal.

We need to prepare the dark chocolate and White chocolate mixture separately and pour White on Black for Marble effect.

The Ingredients’ are : 350 gms  of Condense milk     ;       400 gms of Dark chocolate (60% coco)   ;    1tbsp  of Butter.         Similarly,       50 gms of Condense milk    ;      100     gms of White chocolate    ;     1/2 tbsp of butter


Add the chopped dark chocolate, condensed milk and butter in a (heavy base) pan on a low heat and stir to melt. Pour it in greased tray.

Similarly, prepare the white chocolate and pour it on the top of dark chocolate and swirl it with knife.

Keep it in the fridge for 1 hour and slice and server chill.

With a bite of Fudge, sip a black coffee……..imm…… it’s divine.

No Bake Tofu-Cheese Cake


Yes, this Tofu-Cheese Cake is made without use of Oven.  It’s ideal to serve as a Dessert.

This recipe was shared by my friend Mrs. Shuwaina AL-Harrasi. But, considering a high fat content cream cheese, I go with 50-50 of low fat cheese and Tofu to reduce the net fat content of the cake.


Mrs. Shuwaina AL-Harrasi, not only shared the recipe  also, gifted me the cheese cake pan. She is an expert in pastries and capable to do in “LARGE” quantity. I asked her for a guest posting here, specially an authentic Omani cuisine. Finally, I am glad to dedicate this post to her.

   The Tofu-Cheese is placed on the base, which is made up of a crushed chocolate cookie, either from store shelf or home made. Here, I go with homemade one. You may pick one of these…..Avocado  Cookies or Ragi Cookies


 Ingredients’ for the base :  20 no’s of  chocolate cookies   ;    2 tbsp of  Butter (melted)

 Ingredients’ for the Tofu-Cheese Cake :   395 gms (1 tin)  Condenses milk    ;      150 gms of   Cream cheese low fat (Philadelphia )      ;        ¾ Cup of Whipped cream     ;      150 gms of Tofu (soft)       ;       ¼ cup of Hot water      ;       1 tbsp of  Gelatin.

Base preparation procedure:  In food processor crush the biscuits until mixture resembles like breadcrumbs. Add melted butter and process until it combined. 

Fill the mixture in to the cheese cake pan half filled by pressing firmly. Refrigerate for 30 – 45 minutes.


Now the Cake preparation: For cake, sprinkle gelatin over boiling water. Whisk with a fork until it dissolve.  Set aside to cool for 15 minutes.

Using an electric mixer, beat cream cheese, condenses milk, tofu and vanilla extract until smooth. Gradually add gelatin mixture and beat until combined. Add the whipped cream and fold well. 

Pour mixture on the biscuit base prepared earlier. Smooth the top with a spatula. Cover with cling wrap and refrigerate overnight.

Remove cheesecake from pan and serve  chill.

Chocolate Fudge




After Posting, my very first postwhole wheat Pizza”,  thought of simple and quick sweet Recipe. So, Fudge is my only choice.  As a chocolate lover, (my Favorite is the Dark chocolate.  I just love the harness and bitterness of it) want to make chocolate fudge.

Fudge falls under Confectionery category hence, its sugar based. Fudge can be made in different variations also can be solid and liquid. (Hot Fudge is usually in liquid form)

Fudge is basically made of Sugar and dairy products. We can add nuts or Fruits, not only to taste better; also it’s a best way to add nuts to my son’s diet.   Okay…..Do you any Indian Fudge ?  (Answer at the end of this post)

Chocolate fudge just takes about 20 -25 min to make and needs following:

Dark chocolate-300 gms (70 % Coco) ;  Milk chocolate – 150 gms ;  Condense milk -1 can (395gms) ; Butter – 25 gms ; Walnuts -1/4 cup

Once, you have the above ingredients (direct from supermarket nature) are on your kitchen, lets act……….

Put the chopped chocolate, condensed milk, butter  in a heavy-based pan on a low heat, and stir to melt.

Crush the walnuts in to irregular size and add the nuts to the melted chocolate and condensed milk and stir well to mix.

Pour this mixture into a foil tray (around 9’’ square), smoothing / level the top.

Let the fudge cool, and refrigerate until set. Then cut in to desired shape and size. Keep in the Fridge or freezer. That’s it.  No need to thaw just eats straight away.

Try the Fudge with black coffee, especially after a nap in the noon – Oh its divine!  (I know, coffee mug is missing in the Photograph)
