Rye flour Chocolate Chip Cookies


Lately, I have been seeing many recipes using Millet.  Also, received couple of mails asking to post millet's based recipes.  Once upon a time, millet's were consumed only by poor.  Today, they are expensive than rice and wheat!

From my Son’s social science book, I understand that, one of the reasons for the French Revolution was White Bread. Those days White bread was much expensive than Brown! Now check the price in the nearest bakery.  (Zamana Badal Gaya / உலகம் ஒரு உருண்டை)

Most of the kids do not like to consume millet's directly  (not to blame them).  Also, it’s difficult to bake an edible product with 100% millet. 
Earlier, I used Ragi to make Cookies. Now with Rye. I am pretty sure; Kids can’t even feel the rye flour while eating (thanks to the chocolate) and they ask for more. 

Ingredients:   2 cup of rye flour    ;      1/4 cup of all purpose flour    ;     110 gms of melted butter, at room temp.    ;      2/4 cup of sugar      ;      2/4 cup of brown sugar   ;    2 eggs    ;     1 tsp of vanilla essence   ;     1 ½ cup of chocolate chip    ;      3/4 tsp of baking soda    ;   salt - a pinch

Procedure:  Mix the Rye and AP flours, baking soda and salt keep aside.



In bowl add both the sugars and butter and blend well till sugar dissolved. Add egg, vanilla essence and mix well. Add the flour mixture in to it and combine well.

At last, add the chocolate chips and mix carefully so that, it spread evenly. Using the ice cream scoop, scope the prepared cookies dough on the baking tray in 2’’ apart.


 Transfer the baking tray into the preheated oven for 180°c for 25 min. or till it become brown and crusty. Allow it to cool and store in a air tight container.

Mixed Cookie Tray





Winter holidays began and the festival mood is in the air. Cookies are my choice to celebrate. Also, cookie tray would be a perfect to keep my son hunger low, as he is at home.

Instead of just one type of cookie thought to bake three different kinds for different moods.



The First cookie is Gluten-free chocolate cookies.  Gluten Free?...........In other words no flour.


What is Gluten ? Gluten is a general name for the proteins found in wheat and other grains. Gluten is responsible for elasticity of dough. hence, also for chewiness of baked product.

But, these cookies are backed without flour (Gluten) is very different. I got this recipe from here.

Ingredients : 2 ½ cups of sugar    ;     1/2 cup of coco powder    ;         1/2 tsp cinnamon powder        ;      1/4 tsp of salt          ;        3 egg whites           ;          1 tsp vanilla essence        ;         2 ½ cups of semi sweet chocolate chips. 

Procedure:  In a bowl add powdered sugar, cocoa powder, cinnamon, salt and mix with hand mixer.  Add egg whites and mix well until all combine well. 

Add vanilla extract and chocolate chips and mix them gently with wooden spoon.

Using the small spoon, scope the batter onto the baking tray and spread a bit.

Transfer the tray in to 180°C Preheat the oven to bake about 15 minutes or until the cracking on the top.

Allow it to cool and transfer them to an air tight container.


The second one is Thumbprint cookies. These are popularly known as holiday / picnic cookie. These are called thumbprint because, pressed with a thumb in the center and filled with jam.

You may refer my Coconut shortbread cookies Recipe. After brushing with milk, roll on the crushed mixed nuts instead of coconut. Press with thump in the center to make a dent and bake. Once, the cookies are cooled, fill the dent (at center) with Strawberry Jam.

  

The third one is sugar cookies. Refer my earlier post Button Cookies  prepare the cookie dough and just cut the dough with normal round cookie cutter and bake as directed.

Avocado Chocolate Cookies



 

My son remembered me that, I didn’t bake cookies for quite long….I got into action immediately. 

While thinking various options and checking the fridge, I found Avocado! (Actually, I kept it for next day sandwich)  An idea just flashed……….why not cookie with Avocado ? Since, my son is reluctant to consume avocado directly, this may be the best alternative.


 Avocados are considered one of the healthiest fruit because, they possess  high monosaturated fat, a higher percentage of protein than other fruits and more potassium per gram than bananas.


Ingredients:   1/2 cup of  All-Purpose flour    ;     3/4 cup of  Wheat flour    ;   1 tsp baking powder   ;  2/3 cup of coco powder   ;    1/4 cup of  canola oil    ;     1/4 cup of  mashed avocado  ;     1/4 cup of sugar   ;      ½  cup of  light brown sugar     ;   1 tsp of vanilla essence  ;      1/3 cup of  skimmed milk   ;      1/2 cup of semi sweet chocolate chip or chunks ;     a pinch of salt 

Directions:  In a bowl, whisk together All-Purpose flour, Wheat flour , baking and coco powder and  Set aside. 


Using a mixer, beat the oil, avocado and sugars together until creamy and smooth, about 5 minutes and Add in the vanilla essence.

Now add half of the flour mixture and milk and blend. Slowly add the remaining dry ingredients and blend well. Add the chocolate chips and stir.

Place the cookie dough on prepared baking sheet, (using tablespoon) about 2 inches apart. Slightly flatten the cookies.


 Bake cookies for about 25 minutes, on the 180ºC preheat the oven.  or until set around the edges, soft in the center. 

Allow the cookies to cool and store in the airtight container. A perfect combination for evening tea.

Note : These cookies are not crunchy type. They are soft and Chewy.

Vanilla Surprise Cup Cake with Frosting





My son went for a sleepover to his friend house and wants to treat his friend with Vanilla Surprise Cup Cake with Frosting. 

What is the surprise in a Cup cake? The surprise is there are lot of chocolate chips in side !


Just Imagine, a Vanilla Cup cake with Chocolate chips and fresh cream frosting…..its Divine ! and I am sure it’s a Real Surprise. I got this recipe from one of martha strewart show.

Without anything further, the Ingredients are :  150 gms of Unsalted butter    ;      1 ½ cup of Granulated sugar       ;      6 no’s of  Egg whites   ;     3/4 cup of whole milk    ;   2 tsp  of vanilla   essence     ;       2 cups of All-purpose flour   ;     2 tsp of  baking powder     ;    ¼ tsp of Salt and 100 gms of  chocolate chips


Ingredients for Stabilized Wipped Cream : 1 cup of Heavy cream   ;  2 tsp of  Icing sugar      ;    1  tsp of  Corn flour   ;   1 tsp of  Vanilla essence

Directions : Add butter and granulated sugar into the bowl of kitchen aid (fitted with the paddle attachment) and  mix on medium speed until pale and fluffy, may take up to 3 minutes. 

Add egg whites, milk, vanilla mix until combined. Scraping down sides of bowl as needed.
Add flour, baking powder and salt; mix until just combined. Line a standard 12-cup muffin tin with paper liners and fill them with prepared batter about 3/4.


Put some piece of chocolate chips into center of each and pressing firmly about halfway into batter.  Preheat the oven and bake until pale golden brown. (may take about 20 – 25 minutes). Transfer tin to a wire rack and allow it to cool.

Meanwhile, Beat chilled Whipped cream gently till soft peaks add icing sugar and vanilla essence to the cream in a bowl and again whip the cream until stiff peaks. Now add corn flour to the mixture. Make sure not to over-beat. Otherwise, cream may become like butter.


Pipe stabilized whipped cream on the cup cake.
