Nankhatai ( shortbread cookies )





Nankhatai cookies are Indian shortbread cookies its delicious ,light ,crispy & eggless . Nankhatai is quite popular tea time cookies ,Traditionally these cookies are made with all purpose flour ,ghee ,sugar & semolina they are many variation of nankhatai cookies made with different combination . First time tried with besan flour ( Gram Flour ) But this time baked these cookies using fried Chana dal both are gluten free recipes .






Ingredient – 1 cup – Fried chana dal ; 1/2 cup – powder sugar ; 1/4 cup – cashew powder ; 2 no – cardomom pods  ; 1/2 cup – ghee or  Clarified butter ; 2 tbsp – curd ; pinch of baking powder & salt.






In mixer grind fried chanadal with cardamom pods into fine powder ,
In seperate bowl mix ghee with curd and a pinch of salt & baking soda then all the dry ingredient fried chana dal , cashew powder & powder sugar . Knead into soft dough .




Make equal sized balls out of the dough and place them on the baking tray Flatten slightly to form a cookie. Finally, add chopped pistachios on the top of the cookies and gently press it .








180°C pre–heated oven and bake for 20 minutes . Allow it to cool and sever with hot tea .

Black & White cookies ( gluten free version using rice flour )


Just wanted to break the routine, at the same time don’t want to overshoot my blood sugar / insulin. Hence, baked “limited edition” cookies to satisfy my (also my son) sweet tooth. For me, baking is a relaxation and Cookies are my favourite choice to bake. This “limited edition” cookies were a “kind of” experiment, using rice flour and rice flour is gluten free and it turnout to be good.





Ingredient
s : 113 gms – butter ; 1/2 cup – granulate sugar ; 1/2 cup – cane sugar ; 1 egg ; 1/2 tsp – vanilla essence ; 1 & 1/4 cup – rice flour ; 2 tbsp – cornflour or tapioca flour ; pinch of salt ; 1/4 cup – chopped white chocolate ; 1/4 cup – dark chocolate chunk.

Beat the butter along with sugar, cane sugar, egg & vanilla essences kept aside. Mix all the dry ingredients rice flour, corn flour & salt ,keep aside .




Add the dry ingredients to the wet ingredients
and mix well. ( If need add more FLOUR UNTIL THE DOUGH PULLS AWAY from sides ) separate the dough into two equal portion then add 1 & 1/2 tbsp of coco powder to the one part of the dough then add chopped white chocolate chunk keep aside .



Then add chopped dark chocolate chunk to the another half of dough Scope the plain cookie dough & chocolate cookie dough together using ice cream scoop and arrange it in the greased baking tray. 
In to the pre heated oven for 180 degree and bake the cookies for 12 min.

Amaranth Flour Bread




After switching the HFLC life style (diet) I pretty much restrict the wheat but, without wheat baking is almost impossible. The only option to continue the passion without compromising this life style is finding substitute to wheat so that I can mix with the wheat based flour in order to avoid the net gluten and calorie value. 

Also, In HFLC magnesium is (a very important mineral) recommended to take as supplement, as it’s not available in the regular food. But, amaranth is the only grain, rich in magnesium.  Without any trial and error, 53 % of all-purpose flour and 46% of amaranth flour, combination worked very well to produce perfect bread by all means.


Ingredient  :   2 cups of all-purpose flour     ;      1 ¾ cup of amaranth flour (rajgira)    ;      1 ¼ cup of warm milk       ;       2 tsp of instant yeast         ;      3 tbsp of sugar   ;     1 tsp of salt      ;   3 tbsp of soft butter     ;      amaranth grain popped for topping ( optional)

In a mixing bowl add warm milk, sugar, yeast mix well and keep aside. Mix well the salt, all-purpose flour and amaranth flour. Pour the yeast mixture into flour mix and knead until you have smooth and elastic dough. Add the soft butter and knead the dough further.


If required, add a little flour depends on the consistency of dough. Shape it into a ball and place it in a well-oiled bowl, turning it around to coat it well. Cover the bowl with damp cloth and allow the dough to rise until double in volume.

Gently deflate the dough and shape the dough into a greased loaf tin and cover the loaf tin with damp cloth for an second rise, allow to raise almost at the edges of your loaf tin. Sprinkle the popped amaranth grain on the top.

Transfer the loaf tine into 180°C pre-heated oven and bake about  40 to 50 minutes or till the bread is nice brown on top and sounds hollow when tapped. Spread the melted butter on the top and let it cool.

Enjoy the freshly baked bread with bone broth in the cold morning is a Divine.

Mexican coffee buns / Papparoti




I had been there in paparoti couple of months ago, I enjoyed the bun and my Husband enjoyed the coffee. Since then, I wanted to make paparoti bun. I am glad, I could recreate the paparoti bun or Mexican coffee bun in my oven. (cyberkitchen). I adopted the recipe from here. Though the making procedure is bit long, it was all worth it in the end.

Ingredients  for bun dough  :  2 cups of all-purpose flour (sifted)     ;      3 tbsp of sugar   ;     1/2 tsp of salt       ;        1 ½ tsp of instant yeast      ;         1/4 cup of milk at room temp.       ;      1/4 cup milk + ½ tsp of lemon juice    ;     1 egg     ;       3 tbsp of unsalted butter at room temp.  

Ingredients  for topping :   ¼ cup of all-purpose flour     ;    1/8 tsp of coco powder     ;        2 tbsp of soft Butter    ;      2 tbsp of sugar     ;    1/8 tsp of salt     ;     1/2 egg slightly beaten     ;    10ml strong coffee 


Ingredients  for filling   :   12 No’s of 3 – 4 grams of  unsalted butter cubes   (kept frozen) 
Combine lemon juice and milk, stir gently and set aside until the milk precipitate and become a slightly sour mixture. This helps the bun to be richer and fluffier.

In a separate bowl, combine flour, sugar, salt, instant yeast and mix well. Add milk, milk + lemon juice mixture, beaten egg. Mix well until all the ingredients are combined well. Cover the bowl in damp cloth for about 15 – 20 minutes. Knead the dough further, to form sticky elastic dough. (Use some flour to coat your hands if the dough is too sticky)


Add softened butter (not melted) and knead the dough until the butter is incorporated into the dough. Continue kneading until the dough is completely smooth and elastic and should form a thin layer when stretched.

Transfer the dough to a lightly floured tabletop, Gently shape the dough into a ball with a smooth surface. Coat the dough balls with thin layer of oil, to avoid dough from cracking. Place them into greased bowl and cover with damp cloth until the dough become double in size.

Meanwhile, lets do the topping ………………. Combine flour and cocoa powder and keep aside. Add butter, sugar, salt in a mixing bowl and mix until all ingredients are combined. Add egg and continue beating until the butter mixture is completely incorporated. (Over beating may result a spongy texture topping)


Sift flour and cocoa powder into the bowl Add coffee, mix well until smooth and combined. Transfer topping to a piping bag, and keep in the refrigerator. After the dough has doubled in size, deflate the dough, gently knead the dough and divide into 12 small pieces. Take the frozen butter cubes from the freezer.

Gently stretch a dough ball out, press a piece of filling into the dough and pinch edges together. Seal carefully so the filling doesn’t leak while being baked. Roll the bun with the palms of your hands until round and even. Place on baking tray lined with parchment paper or a silicone baking mat. Repeat with the remaining buns. (make sure you leave enough space between the buns)

Cover the tray with damp cloth for a second rise. Once the dough has become doubled in size, do the topping. Remove the piping bag from fridge and start from the middle and pipe a circular swirl outward. Only cover about 1/2 – 2/3 of the bun’s surface, the topping will melt and cover the rest.


Transfer the baking tray into a 180°c pre-heated oven and bake for 15 – 18 minutes or until the top crust is golden brown and crisp. (If the top turns brown too quickly, cover the buns with a piece of aluminum foil and continue baking until done)

At the age of 60, I learned to bake!  Credits to your blog.  I love the crispy rusk with tea but, couldn’t find a recipe in the blog.  So, can you please let me know the simple bakery style rusk recipe please……..

Thank you for your kind words. “Age is not at all a factor to learn” - You are the perfect example! By the way, I am also big fan of Rusk-Tea combo.

Yes, still there is no Rusk recipe at MCK.  Since, you bake bread; Rusk is not at a big deal. Rusk is nothing but, baking the bread again. So, if you can bake any bread, it becomes Rusk.
However, here the bakery style rusk recipe exclusively for you :-)


Ingredient  :  3/4 cup of warm water           ;           1/4 tbsp of instant yeast ;         1/4 tbsp of sugar         ;          1 ½ cup of  all-purpose flour       ;      1/2 tsp of salt ;     2 tbsp of soft butter     ;  ½ tbsp. of cumin seed

Dissolve the sugar in a lukewarm water and sprinkle yeast over it and mix well. Add salt, butter then add flour and knead to soft dough. Cover the dough with damp cloth and leave it for an hour to rise.

After an hour, punch the dough, sprinkle the cumin seed and knead for about 5 minutes. Shape the dough so that it fits well in the greased baking loaf tin. Cover the loaf with damp cloth and leave it for second rise for about 45 minutes.


Transfer the loaf into 180°C pre-heated oven and bake for about for 30-40 minutes. (do not forget to brush the loaf with milk before, transferring into oven)

Remove the bread from the loaf and allow to cool. Slice into 1/4 inch thick and place the slices on the baking tray and transfer into the 150 °C pre-heated oven and bake till light brown and crisp.

Tip : Rusk can be crushed into powder (using electric blender)  this powder is known as breadcrumbs, used to make cutlets.
