Oat Meal Knots


Nowadays, the awareness of healthy food is widely spoken. Due to the life style shift, people prefer a light breakfast and try to avoid rice and white flour based bread.

Hence, breads that are made by millet's are getting popular and widely preferred. While browsing the www.myrecipes.com, I found an interesting bread recipe. 

I am quite impressed with outcome and thought of sharing to with you all. Also, would like to share the facts of Flax seeds. 



Flax seeds are the rich source of Fiber (both soluble and insoluble), Lignans and Omega-3. Hence, I won’t forget to add flax seeds in my cooking / baking, where ever possible. 

Ingredients : 1 cup of Oats      ;      1/2cup of  honey       ;    2 tbsp of butter     ; 1 ½ tsp –salt     ;   2 cups of boiling water     ;      2 tsp of instant yeast     ;   1/3 cup of  warm water      ;    1/4 cup of flax seed meal        ;     3cups of whole wheat flour     ;     1 ½ cup of all purpose flour       ;     1tbsp milk  (brushing)      ;       1tbsp of oats    ;       1tbsp of sesame seeds

Making Process:  combine the oats, honey, butter and salt in a bowl, add 2 cups of boiling water. Stirring until combine and allow it to cool.

In small bowl add yeast into 1/3 cup of warm water and mix well and pour the yeast mixture into oats mixture and stir. 



Add flax seed meal, whole wheat flour into the Oats-yeast mixture then gradually add all purpose flour. Combine well to soft elastic flour ball.

Place dough in a bowl coated with oil and cover with damp cloth for about  1 ½   hour or until doubled in size. Punch dough down, and let rest for 5-10 minutes.

Divide dough into 24 equal portions. Shape each portion into an 8-inch rope. Tie each rope into a single knot; tuck top end of rope under bottom edge of roll. Similarly, do the rest of the portions.

Place each roll on a baking sheet and cover with plastic wrap and allow to rise for about 1 hour or until doubled in size. 



Brush the rolls with milk, combine the sesame seeds and oats together sprinkle evenly on the rolls and bake in a preheat oven at 180°c until it done.
