Baked Stuffed Naan




After the super duper hit of Avocado Naan, I want to try the stuffed naan with same technique but, here I replaced the avocado with yogurt and slightly altered the flour combination to hold the stuffing better. Otherwise, there are no changes in the preparation process. 


Ingredients’ for Naan :  1 ¼ cup of all purpose flour    ;       ¾  cup of whole wheat flour       ;     1 ¼ tsp of instant yeast       ;     1 tsp of salt     ;     2 tsp of sugar      ;     1/2 tsp of baking powder     ;    2 tbsp of olive oil    ;      3 -4 tbsp of yogurt      ;      3/4 cup of warm water      ;        1/4 cup of sesame seeds       ;        butter for brushing (for butter naan!!!!)
 

Ingredients’ for stuffing: ½ cup of chopped capsicum (yellow and Green)     ;    ½ tsp of chilly flakes      ;    salt to taste ;       2 tbsp of chopped onion    ;     oil for sauté


In pan add oil and sauté the onion then add capsicum, chilly flakes & salt, keep aside.



Follow the same procedure of Avocado Naan till rolling the dough into an oval shape approximately 1/4″ thick. Now, palace stuffing on one side and fold it together and seal the sides and then slightly press it with hand.  


That’s it. Transfer to the preheated (with cast iron in) oven and bake the same way of Avocado Naan.

Blackberry Yogurt Ice cream



 

Since, the mercury is rising day by day I want to give some break to my Oven !! It also increases my kitchen temperature to the considerable level. So better let it be in rest.


What else to cool………Yogurt (curd) and Fruits are the best choice for this summer. Instead of having just a plain yogurt, I thought to make something cool…...Ice Cream.


Ingredient  : 1 cup of milk       ;       1cup of yogurt       ;          1 cup cream       ;        1 cup of blackberry     ;      1/4 cup of sugar

Whip the cream with 1 tsp of sugar till soft peaks formed. In a separate bowl blend milk and yogurt. 



In mixer add blackberry, sugar and blend well. Add the blackberry mixture to the yogurt mixture and combine well. 

Add the blackberry and yogurt mixture to the whipped cream slowly till it fully cooperated. That’s it. Transfer to the freezer for about 7 - 8 hours and enjoy the creamy soft Blackberry Yogurt ice cream.

Broken wheat Savory Bread




An innovative  Savory Semolina Cake was posted by Mrs. Meena and I was quite impressed with the recipe. But, want to try with 75% broken wheat and 25% semolina combination. (Regular visitor of my kitchen knows that, I restrict the use of all purpose flour, semolina and white flour)


 It turned out very good, tasty and healthier bread. I am glad to share here.


Ingredients :      ¾ cup of Broken wheat         ;           ¼ cup of semolina         ;           1 cup of mix vegetables (carrot, beans, peas)            ;        1 tsp of grated ginger       ;     1 green chili chopped            ;         1 tsp of red chili powder         ;        1/3 tsp of turmeric powder            ;     ¾ cup of yogurt          ;         2/4 cup of water         ;           1/2 tsp of red chili flakes         ;          2 tbsp of oil            ;              1 tsp of mustard seeds          ;          1 tsp of cumin seeds      ;           ½ tsp of baking soda     ;       salt to taste     ;       curry leaves


Procedure :  Mix broken wheat, semolina and yogurt keep aside for 15 minutes. Add the mix vegetables, ginger, green chili, red chili powder, turmeric powder, red chili flakes, salt and combine well. Add water just enough to make it into thick batter.

Season the mustard, cumin seeds with Oil and add the curry leaves. Add the seasoning in to the batter mix.


Finally add baking soda to the batter mix and Transfer the batter into greased loaf pan and to the preheated oven and bake at 200ºC for about 30 minutes or until completely done.

Allow it to cool and serve with Mint (Pudina) chutney. (I was asked by my son to bake this at least once in week)
