Chocolate Crackles Cookies




Lately, I realized that, I didn’t share any cookies recipes yet. So I thought of Chocolate Crackles Cookies.  While going thru my hard-copy, there is a foot-note saying, "from Martha Stewart " Probably i got it from her TV show.

Since, its texture is pretty much different from the normal cookies; I assume it got a name “Crackles Cookies”.  The cookies gets such texture during the baking process. Since, my husband and son (me too) like bittersweet chocolate, I go with it. However, you may go with semi sweet chocolate also.

The Ingredients, required are  60g  of  bittersweet chocolate ( finely chopped)  ;  1 cup (125 g) of  all-purpose flour   ;    1 teaspoon of baking powder  ;   1/4 (30 g) cup of unsweetened cocoa powder   ;   1 cup (200 g) of granulated sugar   ;  2 large  eggs  ;   4 tablespoons of unsalted butter( melted)    ;   3/4 teaspoon of pure  vanilla extract   ;  1/2 (110g) cup of confectioners' sugar.

Like the Fudgy Brownies, Melt chocolate in double boiler and set aside.

Whisk together flour, baking powder, and cocoa in a bowl and set aside.

In another bowl, Whisk together granulated sugar, eggs, and melted butter.  Then, gradually add melted chocolate and vanilla extract until smooth.  Slowly add and Stir in flour mixture. 

Refrigerate until firm, may take up to 3 hours.

Preheat oven to 325 degrees. Roll tablespoons of dough into balls in a polished surface and then roll in confectioner sugar to coat over. 

Transfer to parchment-lined baking sheets, spacing each 1’’ apart. Bake until slightly firm in the center, may take about 15 minutes.

Once, cooled, Transfer cookies to air tight container.


   


It’s a pretty simple and easy recipe, and I like with Kadak Chai (Tea). What about you ?
